Vanilla-Almond Ice Cream with cherries and pistachiosd46ea523900a5ada7094191e8c17b5ed (1)

INGREDIENTS

  • 6 large egg yolks
  • 1 1/2 cups heavy cream
  • 1 1/2 cups whole milk
  • 3/4 cup sugar
  • 3/4 teaspoon kosher salt
  • 1 vanilla bean, split lengthwise and seeds scraped
  • 1/2 teaspoon pure almond extract
  • 3/4 cup fresh cherries, pitted and halved
  • 1/4 cup shelled pistachios, coarsely chopped

HOW TO MAKE THIS RECIPE

  1. Set a medium bowl in a large bowl of ice water. In another medium bowl, beat the egg yolks until pale, 1 to 2 minutes.
  2. In a medium saucepan, whisk the cream with the milk, sugar, salt and the vanilla bean and seeds. Bring to a simmer, whisking, until the sugar is completely dissolved. Very gradually whisk half of the hot cream mixture into the beaten egg yolks in a thin stream, then whisk this mixture into the saucepan. Cook over moderately low heat, stirring constantly with a wooden spoon, until the custard is thick enough to lightly coat the back of the spoon, about 12 minutes; don’t let it boil.
  3. Strain the custard through a medium-mesh strainer into the bowl set in the ice water; discard the vanilla bean. Let the custard cool completely, stirring occasionally. Stir in the almond extract. Pour into a large resealable freezer bag and seal, pressing out the air. Lay the bag flat in the freezer and freeze until firm, at least 8 hours or overnight.
  4. Working quickly, in batches if necessary, transfer the frozen custard to the bowl of a food processor. Pulse at 5-second intervals until smooth. Transfer the custard to a chilled 9-by-4-inch metal loaf pan and fold in the cherries and pistachios. Cover with plastic wrap and freeze until firm, about 6 hours or overnight.

MAKE AHEAD

The ice cream can be frozen for up to 1 week

NOTES

Instead of cherries and pistachios, try folding in 1 cup of chopped chocolate-covered pretzels or chopped halvah.

I would paint the craft table with Martha Stewart’s Sea Glass color that is at the Home Depot.  I love that chair, also.

I have a 3-ring binder with plastic page protectors with recipes that I print out that I want to save.  I like the above idea that I just send to the Walmart on line at the local Super Walmart to print out 8 1/2 X 11 page print and it makes a nice addition to my cook book.  I could print it out on my printer but it takes up too much ink and is cheaper to just have printed.

I like those Sheet Protectors with dividers that you can use for dividing the sections of the book and the tabs go out so that you can see them.

I found a free print out that I can use for my 2″ 3-ring binder that has the tabs for the dividers and then the insert for the 2″ side of the binder.

And then it has all the dividers.  I pinned the idea sources on my cook book ideas on my Pinterest.  I like it because it organizes recipes that you want to save and they are easy to find.

That’s one of my inspirations to organize my recipes.  I also have Cook’n software that prints out recipe books from recipes that I save.  It makes dividers, indexes and has all kinds of formats.  I started a family recipe cook book from using that.  It has photos of my Mom, Gram and Aunts in it and little stories along with their recipes and just fun stuff.

Another inspiration that I have is to make a yo-yo quilt.  My Mom made one way back before she met my Dad.

I like glass bottles and it’s fun to find little treasures like that.

I like the above cabinet.  It would be awesome for a sewing room to keep material in.  The lady that has the cabinet got it for free.  The glass was out of it and the paint on it had yellowed.  She paid $35.00 for new glass to put in, sanded it down and painted it white.  I think that I would have not put the print on the inside, but painted it a soft sea color, although the print looks nice.  What a find to get for free and what a beautiful cabinet.
