I love Italian Subs and the above salad is a great way to enjoy a sub without all the carbs from the thick bread roll.

A really favorite Roasted Beet Salad is the Beet and Cream Cheese Napoleon Salad with candied pecans and shallot balsamic dressing. I love this salad.

A French Veggie Nicoise Salad is like dining in a French Bistro. Love it.
A French Bistro Brunch Salad is awesome. The tomatoes are broiled and then the fingerling potatoes are boiled and the dressing just brings it all together with the poached egg, chopped bacon and greens.
I love a Pear, Roquefort and Walnut salad with Arugula. One of my favorites.
A Chicken Salad is good on greens or in a wrap.

Everyone has their favorite dressings. My favorite blue cheese dressing is a Suzanne Somers recipe. I also like her Taco Salad recipe. I have little mason jars that I shake up my dressings in.
